Our Process

A Premium Tequila Requires a Premium Process...

Crafted from 100% Blue Agave, fully mature at harvest. Southbound is a perfect blend of agave plants grown in both the lowlands and highlands of Jalisco, Mexico. You will experience a high variety of complex spice and herb notes that are characteristic to the agave plants in the lowlands region with just the right balance of the juicy acidic notes of fresh citrus and fruits offered from the highland region.

Harvesting

Our Harvesting Process

100% blue agave piñas are harvested at full maturity and trimmed very close to the heart leading to a clean fermentation and distillation process. These steps are the key to a high quality final flavor.

Cooking

Our Cooking Process

Our agave is slow roasted in centuries-old traditional brick ovens combined with autoclave cooking method.

Shredding

Our Shredding Process

Roller Mill Extraction method is used to separate agave fibers from the sweet cooked juice.

Fermentation

Our Fermentation Process

Open air, slow fermentation up to 60 hours without fibers for a full bodied final result.

Distillation

Twice distilled, stainless steel pot, 40% ABV. 80 Proof
